Ingredients:
- 1 can 12 oz Hereford Corned Beef chopped
- 8 packaged frozen waffles (4 split English muffins can be substituted) toasted
- 8 eggs poached
- 1 cup Swiss cheese grated
- Salt and pepper to taste
Directions:
- Arrange the Hereford Corned Beef evenly over toasted waffles on baking sheet.
- Place a poached egg on each.
- Distribute about 2 tbsp cheese over each waffle.
- Sprinkle with salt, pepper and paprika.
- Broil in oven until cheese is melted.
- Garnish plates as desired.
