Poached Eggs Au Gratin Recipe


  • 1 can 12 oz Hereford Corned Beef chopped. 
  • 8 packaged frozen waffles (4 split English muffins can be substituted) toasted 
  • 8 eggs poached 
  • 1 cup Swiss cheese grated
  • Salt and pepper to taste


  • Arrange the Hereford Corned Beef evenly over toasted waffles on baking sheet.
  • Place a poached egg on each.
  • Distribute about 2 tbsp cheese over each waffle.
  • Sprinkle with salt, pepper and paprika.
  • Broil in oven until cheese is melted.
  • Garnish plates as desired.
